Mom's Southwest Breakfast Casserole

Making my mom’s southwest breakfast casserole! She makes this every Christmas morning for our family brunch, and I look forward to eating it every year!

Ingredients:
  • 1 lb ground italian sausage
  • 1 small onion (chopped)
  • ½ green pepper (chopped)
  • 1 can diced tomatoes with green chiles
  • 8 10” flour tortillas (torn into bite-sized pieces)
  • 3 cups shredded colby jack cheese
  • 6 eggs
  • 2 cups milk
  • Salt & Pepper
Directions:
  1. Brown and drain italian sausage. Add onion and green pepper. Saute.
  2. Add the can of diced tomatoes and simmer for 10 minutes.
  3. In a sprayed dutch oven or casserole dish, layer ½ of the tortilla pieces.
  4. Add in ½ of the sausage mixture.
  5. Add half of the cheese.
  6. Repeat steps.
  7. Whisk together eggs, milk, salt, and pepper.
  8. Pour over layered ingredients.
  9. Cover and bake for 1 hour on 350 degrees.
